Long Pistachio (Ahmad Aghaei Pistachio)

This nut is relatively large, and its fruit is almond-shaped. It can be harvested in late September. The newest commercial variety is very popular with the farmers because of its high yield and shorter production time. It is trendy in some markets like India and Greece. Production of this variety is increasing. It also has the whitest shell hue among the other kinds of Pistachio. Available sizes of Ahmad Aghaei Pistachio are 20/22, 22/24 and 24/26, with 18/20 in small quantities.

Super Long Pistachio (Akbari Pistachio)

This type of pistachio is almond-shaped and larger than Ahmad Aghaei, with a unique taste and texture. It can be harvested in late September, and it is famous for its highest economic value among other types and is popular in East Asia, Europe and Russia. It can be distinguished from the color of its shell, which is dark cream. Available sizes are 20/22, 22/24, and 24/26, with 18/20 in small quantities.

Badami Pistachio (Semi-Long), one of the most valuable and tasty types of Iranian pistachios, is also known as white pistachio. Badami Pistachio is in the category of long pistachios along with Akbari Pistachio (Super Long Pistachio) and Ahmad Aghaei Pistachio (Long Pistachio). This type of pistachio has a relatively elongated appearance, and its general shape is similar to almonds, which is the main reason for naming this pistachio cultivar. Badami Pistachio (Semi-Long) is small and has a low ounce (a criterion for showing smallness or largeness of pistachios). Badami Pistachio (Semi-Long) is also one of the pistachio types that are very popular for export. The main reason for this popularity is the reasonable price of this product compared to other pistachios.

Round Pistachio (Fandoghi Pistachio)

This cultivar is the most widely available pistachio variety and grows in most pistachio growing areas of Iran. Fandoghi is of round type and has the lowest shape index among the four cultivars. Around 50% of Iranian production is of the Fandoghi type in recent years. The reason is its limited yield, the new orchards are seldom planted with this variety. The round shape of this type of pistachio is similar to Jumbo, but it is shorter and smaller than Jumbo in size. Available sizes are 28/30, 30/32 and 32/34 nuts per ounce. Size 26/28 is also available in small quantities.

Jumbo Pistachio (Kalleh Ghouchi Pistachio)

This nut is famous for being large. It is sensitive to the water shortage, and its leaves are complex. It is called Jumbo because of its large and rather fat shape. It is round, long, and naturally opened with a light cream shell and a beautiful appearance. This type of Pistachio is larger than Fandoghi Pistachio, and it is vulnerable to cold weather in spring. It can be harvested in mid-September.
Overall, Kalleh Ghouchi is not being budded anymore, and production is from existing trees. Although commercially quite successful, Kalleh Ghouchi trees showed a steep drop in growth and production as they grew older than 40 years old. It is expected that the production will slowly decline. Available sizes are 20/22, 22/24, and 24/26, with 18/20 in small quantities.

Green Kernel Pistachio

The Green Kernel pistachio has particular consumption for confectionary purposes, having the same quality as Kernel Pistachio but has a higher value than the other types. This type of pistachio is normally produced by harvesting pistachios that are still raw (Kaal). Kernal Pistachio usually is more expensive than other pistachios due to the costly process. As the color of Kernels is greener, the price of Kernal Pistachios is higher. Iranian Green Kernels are known as a luxury food ingredient used in various industries such as pastries, chocolate, ice cream, sausages, and ham.
